Cooking for vegetarians can easily become boring making the same old routine but  bean soup sweet and sour is a great change of that stale style.

Bean Soup Sweet and Sour adds a new depth with oriental flavors.

You maybe more familiar with the flavors of bean soup sweet and sour as the chinese hot and sour soup.  The additional protein from the blackeyed peas makes bean soup sweet and sour a more rounded entree.  For guests and family members who are not vegetarians I serve the bean soup sweet and sour with a bowl of salad shrimp that they can add to the hot and sour soup as they wish.

a vegetarian bean soup with hot and sour taste
Ingredients
  • Ingredients
  • 12 fresh mushrooms sliced
  • 6 cloves garlic, minced
  • 1/2 cup firm tofu bite size pieces
  • 1/4 cup grated fresh ginger
  • 8 cups warm water
  • 1/4 cup soup base (chicken flavor)
  • 1/8 cup Braggs Aminos or Soy Sauce
  • 1 teaspoon sesame oil
  • 2 Tablespoons Sweet and Sour Sauce
  • 3 teaspoon hot sauce
  • 2 tablespoons rice wine vinegar
  • 2 cups Black Eye Peas
  • 2 cups of salad shrimp for the non vegetarians)
Instructions
  1. Combine the beans/blackeyed peas, mushrooms, garlic, tofu, 1 tablespoon ginger, water, bouillon, Braggs, sesame oil, hot sauce, sweet and sour sauce, and vinegar in the pressure cooker. Cook on high for 25 minutes. Quick release the pressure on your bean soup sweet and sour and serve.
  2. Set the bowl of shrimp for the omnivores to add to the the bean soup sweet and sour as they wish.
  3. You can adjust the flavor by increasing or decreasing the vinegar, hot sauce, and sweet and sour sauce. If your family or guests do not like spicy serve the hot sauce as a condiment.
